This course will look at the history of distilled spirits in North America from 1608. We will examine the bumbling history of accidental discoveries through its westward expansion and popularization. The basic science of distillation, sugar sources, and some popular applications are included. An exercise in the recognition of the basic flavors imparted to spirits, post distillation, may be required.
